The Story

Ajitama, short for ajitsuke tamago, is a seasoned soft-boiled egg commonly served with ramen. The eggs are cooked just long enough to leave the yolks soft, then soaked in a mixture of soy sauce, mirin, sake, and water. Their rich yolks and savory exterior make them a simple but distinctive ramen topping.

Ingredients

  • Eggs
  • 2 parts water
  • 1.5 parts soy sauce
  • 1 part mirin
  • 1 part sake

Instructions

  1. Boil the eggs for 7 minutes.
  2. Transfer immediately to an ice bath.
  3. Combine the marinade ingredients.
  4. Soak the eggs in the refrigerator for 24 hours, keeping them covered with a paper towel so the marinade stays in contact with the surface.
