The Story
Ajitama, short for ajitsuke tamago, is a seasoned soft-boiled egg commonly served with ramen. The eggs are cooked just long enough to leave the yolks soft, then soaked in a mixture of soy sauce, mirin, sake, and water. Their rich yolks and savory exterior make them a simple but distinctive ramen topping.
Ingredients
- Eggs
- 2 parts water
- 1.5 parts soy sauce
- 1 part mirin
- 1 part sake
Instructions
- Boil the eggs for 7 minutes.
- Transfer immediately to an ice bath.
- Combine the marinade ingredients.
- Soak the eggs in the refrigerator for 24 hours, keeping them covered with a paper towel so the marinade stays in contact with the surface.
