The Story

Menma is seasoned bamboo shoot and one of the classic toppings found on Japanese ramen. The bamboo is simmered with soy sauce, mirin, and sugar, then left to absorb the seasoning before serving. Its slightly chewy texture provides a contrast to both noodles and broth.

Ingredients

  • 500 g bamboo shoots
  • 100 g mirin
  • 15 g sugar
  • 20 g soy sauce
  • Sesame oil

Instructions

  1. If needed, soak the menma in the refrigerator for 24 hours.
  2. Add the bamboo, mirin, sugar, and soy sauce to a sauté pan.
  3. Cook, stirring occasionally, until some of the liquid is absorbed, about 10–15 minutes.
  4. Add sesame oil to coat.
  5. Transfer to a container and let soak for 24 hours.
